Jinzhong means Central Shanxi (Province), to the west of the Taihang Mountain Range.

The city of Jinzhong today has a population of just over three million, more than two thirds of which are involved in agriculture. Jinzhong is in fact one of the world’s oldest agricultural centers.

People living in this region cannot be described as leading a wealthy lifestyle, but they know more about pastry than anyone else in China. Now, when a type of food evolved to become part of the social and cultural fabric, it is time to take notice.
